He\nlived in Naples until he was 6 and returned to Avellino, in Castelvetere, until\nhe was 18. He has a home in Castelvetere and his wife is from there. Favorite\ndishes: eggplant parmigiana in summer and sausage and friarielli in winter.<br>\nDespite an innate passion for cooking and family\nculture for food full of respect, D\u2019Agostino\u2019s training goes beyond the classic\npaths: he did not start at 15 years old and did not attend the hotel business,\nafter high school he enrolled in Law school in Naples, at Federico II.<br>\nTo work in the kitchen is a need: to achieve\neconomic independence. Work started in Avellino\u2019s trattorias, at the age of 24\nand he had experience in London.<br>\nAs a turning point in his training path,\nD\u2019Agostino remembers an episode that occurred during a Culinary Course in 2003 at\nCitt\u00e0 del Gusto in Rome. Chef-trainer Severino Gaiezza asked D\u2019Agostino to work\nas a cook in Focene, Fiumicino.<br>\nWhen someone gives you trust, independence and you\nhave the courage to jump, you become aware of your own growth. It was also a\nuseful experience to take further steps.<br>\nSteps that after years of training and work lead\nto Veritas, Stefano Giancotti&#8217;s restaurant, which honors ingredients.
