Her restaurant &#8220;Le tre stelle&#8221; is located in Casal Velino, where she lives. The drive that led her to become a restaurateur was having strongly felt the need to communicate her belonging to the authentic world of fishermen from which she comes. The world of the father and grandparents was rich in values, such as education, sacrifice, and respect for the marine and terrestrial ecosystem, inherent in the daily gestures of those who lived in the sea every day.<\/p>\n\n\n\n<p>She recalls, calling it a collective ritual, waiting for the return of the fishing boats that were pulled up with a winch because there was no port where they could anchor. His father built fishing nets in a large shack. Today, Franca preciously keeps a manaide (a fishing net) in her house. In memory of that world, studded with the memories of the fishermen on disembarkation who ate raw anchovies with only squeezed lemon, which also had a disinfectant function, she wanted to give great space to raw fish in her kitchen. To Franca, her cuisine is a hymn to the memory of the scents of the past and of the sea. The dish she cares most about is in fact the anchovy meatballs that her grandmother used to make for her.
