Anchovies are one of the ingredients that can not be missing because they are the symbol of the area and its tradition. When Vincenzo was a kid, Castellabate&#8217;s fleet of cianciole was known throughout Italy, and they flocked there from every corner of the country to buy anchovies; since there were plenty of them, he always managed to get a fair amount to take to the countryside and exchange for the farmers&#8217; fresh seasonal produce.
