The interview traces the biochemical origins of alcoholic fermentation, the religious and convivial symbolism of wine in Greek and Roman culture (the symposium as an educational institution), the risk of breaking the generational transmission of oenological knowledge, and the dangers of prohibitionism compared to a responsible educational model. Moio reflects on territorial vocation, on the value of indigenous Irpinian varieties (especially Greco and Aglianico) in the face of climate change, and on wine as a paradigm of diversity and territorial identity in a globalized world. The comparison with Burgundy and Bordeaux highlights the vast unexpressed potential of the Italian ampelographic platform.

Interview by: Marino Niola
Video by: Elisabetta Moro, Marco Bottigliero e Mariangela Bianco
Video Editing by: Marcello Santella
Document by: Mariangela Bianco
Subtitle ita/eng by: Marco Bottigliero
Translation by: Marco Bottigliero
MedEatResarch – Center of Social Research on the Mediterranean Diet of the University of Naples Suor Orsola Benincasa, head by Marino Niola and Elisabetta Moro
Realized: 28/07/2025

Luigi Moio, Full Professor of Oenology at the University of Naples Federico II, one of the most authoritative oenologists in the world and founder of the Quintodecimo winery in Irpinia, speaks with Marino Niola about the role of wine as a founding element of Mediterranean civilization.
