Against the most widespread prescriptions on contemporary diet, the multistarred chef Alfonso Iaccarino calls himself a promoter of a pasta-based diet.
To validate his thesis, he cites the example of his friend and biker Francesco Moser, who received very positive effects for his sporting activity by substituting animal proteins with pasta, legumes and fruit.
Don Alfonso underlines the importance to pass on the future generations the memory of food. He considers a desirable thing to recover the hill zootechnics and the Italian cereal vocation.
