Gennaro Esposito is an excellent Neapolitan chef, owner of the Torre del Saracino restaurant in Vico Equense, a land that generated him and to which he has always been linked. His professional and entrepreneurial career is marked by two Michelin stars received in 2001 and 2008 respectively. Peering through indelible memories, chef Gennaro Esposito reveals the figure of his mother, synonymous with work, simplicity and concreteness, the values ​​he wanted to propose in his cuisine but with a firm eye on innovation and creativity. In his view, “innovative cuisine” is the one that can win people’s hearts and that is within everyone’s reach. He hopes for a better future for agricultural production which is in danger both for climate change and for the lack of interest young people, which are not accustomed to nature’s times. In the future he sees dishes that can mirror their autor’s personality and where the typical raw materials of the territory and simplicity are increasingly found.
