Mariano Panariello is the owner of San Pietro Bistrot del Mare, a restaurant in Torre del Greco (Naples) that is lucky enough to overlook the prestigious Gulf of Naples. Mariano is very attached to his town and he continually offers his customers traditional dishes, by revisiting them such as spaghetti with garlic, oil e chili and tofe (rockfish). During the collected testimony, Mariano also tells us about his memory dish known as ‘a mazzamma, and how he still proposes it to his customers today, about the importance of seasonality of both fish, fruit and vegetables, and about his vision of conviviality.
