This interview has been realized to track down a chef’s memory in order to know his relationship with the mediterranean diet and knowing the importance that it has in his cooking and his ways to convey it in all the dishes he proposes, which are a masterful example of it. During the conversation, the main phases of chef Lino Scarallo’s life related to food have been recalled. The interview starts with his childhood memories related to traditional dishes and to the ones who took part in his formative experience which started when he was a child through the smells and the tastes of grandparents’ kitchen. After we found out the ingredients that influenced his current way of cooking, we focused on the present management of the first of the season and the matches in his cooking, then we talked about his menus and the frequency they are revised with. Then the struggle between tradition and innovation has been faced: it became banner of Lino Scarallo’s cuisine, who affirms he can not imagine innovation without looking back to tradition, wich is the bases of any change. We also debated the multicultural nature of his dishes, we discussed about the international influences and about the mixture of overseas tastes. In the end we asked the chef to give a definition of the mediterranean diet wich is the uncontested queen of his cuisine. The chef defines it simple and healthy respecting the first quality ingredients wich make it unique. Its uniqueness maybe lies in its simplicity.
